Smoky, savory, and packed with flavor, these BBQ oyster mushrooms are the perfect plant-based alternative for any cookout or comfort food craving!

Skewers:

  • 2- 3 lbs of oyster mushrooms
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp adobo
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 tsp curry powder
  • 1 tsp fresh thyme
  • 1-2 sprigs of fresh rosemary
  • salt to taste
  • Juice of 1 fresh lime
  • Fresh cilantro ( to sprinkle on top)
  • olive oil for sauteing
  • BBQ sauce of choice

DIRECTIONS:

Prepare the marinade: In a large bowl, combine all spices (about 1 tsp of each, or to taste), the juice of 1 lime, and a few sprigs of fresh thyme and rosemary. Toss the oyster mushrooms in the marinade, ensuring they’re evenly coated. Let sit for 10–15 minutes.

Sauté the mushrooms: Heat a large skillet over medium heat with a drizzle of olive oil. Add the marinated mushrooms and sauté for 5–7 minutes, stirring occasionally, until they release their water and begin to brown slightly.

Skewer the mushrooms: Once sautéed, thread the mushrooms onto skewers. (If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.)

Grill the skewers: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 10 minutes, turning occasionally. During the last couple minutes, generously brush on your BBQ sauce, allowing it to caramelize and create that smoky, sticky, BBQ flavor.

Serve: Remove from the grill and serve hot with your favorite sides!

Notes:

  • Grilling these mushrooms gives them an authentic BBQ flavor that’s hard to replicate in the oven. However, if you don’t have a grill, you can roast them in the oven at 425°F for 15–20 minutes, finishing with BBQ sauce during the last few minutes.
  • Sautéing the mushrooms first ensures they don’t release too much water on the grill, helping them get that perfect smoky char.
