Ingredients:

For the Bean Dip:

  • 1 can white beans (drained and rinsed)
  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • ½ tsp salt (to taste)
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp white pepper
  • 1 tsp cumin
  • 1 tsp curry powder
  • 1 tsp Italian seasoning
  • ½ tsp poultry seasoning (optional)
  • 1 tsp adobo seasoning
  • 2 cloves fresh garlic, minced
  • 2 tbsp fresh cilantro, chopped
  • Dash of veggie stock (or more, depending on desired consistency)

For the Chili Garlic Sauce:

  • 1 tbsp gochujang (Korean chili paste)
  • 2 tbsp water
  • 1 tsp coconut sugar
  • 1 tsp lemon juice
  • Pinch of the same seasonings used in dip (garlic powder, onion powder, cumin, curry powder, Italian seasoning, adobo)
  • Splash of water (to adjust consistency)

Toppings:

  • Vegan plain yogurt (for garnish)

Instructions:

Prepare the Bean Dip:

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine the white beans, olive oil, sesame oil, garlic powder, onion powder, cumin, curry powder, Italian seasoning, poultry seasoning, adobo, salt, and pepper.
  • Add the fresh garlic and cilantro. Mix well to combine.
  • Spread the mixture onto a baking sheet and bake for about 10 minutes, allowing the flavors to meld and the beans to warm through.

Blend the Bean Dip:

  • After baking, save a small portion for garnish and add the rest of the mixture to a food processor.
  • Add a splash of veggie stock and blend until smooth, adding more veggie stock as needed to achieve your desired consistency. Taste and adjust seasonings if necessary.

Make the Chili Garlic Sauce:

  • In a small pan over medium heat, whisk together the gochujang, water, coconut sugar, lemon juice, and the same seasonings used for the dip until it starts to come together and is fragrant
  • Add a splash of water to adjust the consistency to your liking (you want it to be drizzle-able but not too runny).

Assemble the Dip:

  • Transfer the creamy bean dip to a serving dish.
  • Drizzle the chili garlic sauce over the top.
  • Finish with a generous dollop of vegan yogurt for extra creaminess.
  • Add additional baked beans and sprinkle fresh cilantro for garnish

Serve and Enjoy!

  • Serve with fresh veggies, pita bread, or your favorite dipping chips.
