Caribbean Plantain Wraps

These Caribbean plantain wraps are my kind of comfort food—sweet, savory, and full of island vibes in every bite! They’re totally vegan, super satisfying, and perfect for when you want something bold, flavorful, and a little bit nostalgic. Wrapped up goodness, just like home.

Ingredients
Wraps
- 2 ripe plantains, peeled and chopped
- 1 cup whole wheat flour
- 1 bunch cilantro, finely chopped
- 1 teaspoon adobo seasoning
- ¼ teaspoon smoked paprika
- ¼ teaspoon curry powder\
- ¼ teaspoon garlic powder
- Coconut oil, for pan-frying
Notes:
Plantain Tip: Make sure your plantains are nice and ripe—yellow with black spots is the sweet spot! That caramelized sweetness takes the whole wrap to the next level and pairs perfectly with savory fillings.
Filling Vibes: I filled these wraps with my flavorful Caribbean jerk tofu (recipe also on the blog!)—it’s spicy, savory, and packed with island flavor. But feel free to mix it up with what you love!
Herb Boost: Fresh herbs really bring this wrap to life. I love using cilantro for that pop of brightness, but parsley, basil, or even mint can add a fresh twist too.


Step by Step Instructions
Boil & Mash:
Bring a pot of water to a boil and add the chopped plantains.
Cook for 10-12 minutes until soft and fork-tender.
Drain and transfer to a mixing bowl. Mash until completely smooth.
Make the dough:
Add the whole wheat flour, chopped cilantro, adobo seasoning, smoked paprika, curry powder, and garlic powder to the mashed plantains.
Mix well until a soft dough forms. If too sticky, add a little more flour
Shape the wraps:
Divide the dough into small portions and roll each into a ball.
Place each ball between two sheets of parchment paper and flatten it into a thin disc using your hands or a rolling pin.
Pan-fry the wraps:
Heat a small amount of coconut oil in a pan over medium heat.
Cook each wrap for 2-3 minutes per side, until golden brown and slightly crispy on the edges.
Transfer to a plate and cover with a clean kitchen towel to keep warm.
