Easy Blueberry Bagels

These easy vegan blueberry bagels are soft, chewy, and bursting with juicy berries in every bite—aka my kind of morning magic! I used to think homemade bagels were complicated, but this recipe proved me wrong. Now I’m obsessed, and you will be too.

Ingredients

Bagels

  • 1 cup all-purpose flour (can use gluten-free or whole wheat)
  • ½ cup vegan yogurt (unsweetened/plain, I used coconut)
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup mashed blueberries
  • ½ teaspoon cinnamon
  • 1 tablespoon maple syrup
  • Olive oil, for brushing

Notes:

Blueberry Tip: You can use frozen wild blueberries—they’re smaller, pack more flavor, and don’t bleed as much into the dough. But fresh works too if that’s what you’ve got!

Dough Texture: If your dough feels too sticky, don’t panic—just add a little flour, 1 tablespoon at a time, until it’s workable. You want it soft and slightly tacky, not a sticky mess.

Step by Step Instructions

Prep the dough: 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the flour, salt, baking powder, and cinnamon. Add the vegan yogurt, mashed blueberries, and maple syrup.

Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

Shape the bagels

Divide the dough into 2-3 equal portions and roll each into a ball.

Using your fingers, poke a hole in the center of each ball and gently stretch it into a bagel shape.

Bake the bagels: 
Place the bagels on the prepared baking sheet and brush lightly with olive oil.

Bake for 10 minutes, or until golden brown and firm.

Let cool for a few minutes before slicing and serving.
