These easy vegan blueberry bagels are soft, chewy, and made with just a few simple ingredients—no yeast required! Perfect for a quick homemade breakfast or snack.

Ingredients:

  • 1 cup all-purpose flour (can use gluten-free or whole wheat)
  • ½ cup vegan yogurt (unsweetened/plain, I used coconut)
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup mashed blueberries
  • ½ teaspoon cinnamon
  • 1 tablespoon maple syrup
  • Olive oil, for brushing

Instructions:

Prepare the Dough

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the flour, salt, baking powder, and cinnamon. Add the vegan yogurt, mashed blueberries, and maple syrup. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

Shape the Bagels
Divide the dough into 2-3 equal portions and roll each into a ball.
Using your fingers, poke a hole in the center of each ball and gently stretch it into a bagel shape.

Bake the Bagels
Place the bagels on the prepared baking sheet and brush lightly with olive oil.
Bake for 10 minutes, or until golden brown and firm.
Let cool for a few minutes before slicing and serving.
