Garlic Mash Potatoes

There’s nothing more comforting than a bowl of creamy garlic mashed potatoes, and this vegan version gives you all the rich, buttery flavor without the dairy. Smooth, fluffy, and packed with roasted garlic flavor, these mashed potatoes are the perfect classic side dish to pair with hearty meals like my garlic thyme vegan steaks. Simple, cozy, and guaranteed to become a staple at your table.

Ingredients

2 lbs Yukon Gold potatoes, peeled and chopped

5–6 garlic cloves

4 tbsp vegan butter

1/2 cup unsweetened plant based heavy cream ( or milk) (more if needed)

1 tbsp olive oil

½ tsp onion powder

½ tsp garlic powder

½ tsp lemon pepper

2 sprigs of FRESH rosemary

Salt & black pepper to taste

Optional: fresh herbs like chives, cilantro, parsley for garnish

Notes: 

Herbs Are Customizable: Feel free to play around with the herb combo based on what you have! 

Make It Your Own: This is a great base recipe! You can fold in other ingredients 

Why Baby Yukon Potatoes?: I love using baby Yukons because they’re small, tender, and naturally creamy in texture. But you can absolutely use other varieties—red potatoes, fingerlings, or even chopped russets work too. Just be mindful of cook time!

 

 

Step by Step Instructions

Boil the Potatoes:
Wash the baby Yukon potatoes and place them in a pot. Cut into halves or quarters depending on size. Cover with cold salted water. Bring to a boil, then reduce heat and simmer for 10–15 minutes, or until fork-tender  

Drain:
Drain the potatoes and garlic well, then place them back into the warm pot for 1–2 minutes to help remove excess moisture. This helps create extra fluffy mashed potatoes.

Heat heavy cream:
Add your seasonings, vegan butter, olive oil, and plant heavy cream and or milk to another pot. let it boil and mix together infusing into the milk. Then once combined add into pot of potatoes. Mash everything together until smooth and creamy. Add more plant milk as needed depending on your preferred texture.

Serve:
Top with extra herbs or red chili flakes for garnish.
