This Vegan Cashew Parmesan is the perfect plant-based topping to sprinkle over all your favorite dishes. Made with just a few wholesome ingredients like raw cashews and nutritional yeast, it delivers that salty, cheesy flavor without any dairy.

Ingredients

sauce:

  • 1 cup raw cashews
  • 4 tbsp nutritional yeast
  • ½ tsp sea salt (or to taste)
  • ½ tsp garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 white pepper
  • 1/2 teaspoon dried Italian herbs (optional)

Notes: 

Nutritional Yeast = That Cheesy Flavor:
Nutritional yeast is what gives this sprinkle its classic cheesy, umami-rich flavor. It’s a plant-based pantry must-have and also adds a little protein and B vitamins!

Customizable Texture:
Prefer it chunkier or smoother? Pulse more or less depending on your texture preference. You can also substitute part of the cashews with almonds, walnuts, or sunflower seeds if desired.

Sprinkle on Everything:
This is the kind of topping that goes beyond pasta — try it on roasted veggies, pizza, popcorn, or soups for a hit of cheesy, nutty goodness.

 

Step by Step Instructions

Cheese:

Add all ingredients to a food processor or high-speed blender.

Pulse until you reach a fine, crumbly texture that resembles grated parmesan. Be careful not to over-blend — you want it dry and powdery, not a paste.

Taste and adjust seasonings if needed.

Store in an airtight container in the fridge for up to 2–3 weeks.
